Some menu ideas fail quietly. The kitchen tries them, regulars don't reorder, and they disappear in the next reprint. The birria pizza at Bert's went the other direction.
The concept started as an experiment - what happens if you put the same slow-braised beef that goes into the quesabirria tacos on top of a New York-style pizza? The short answer: a lot. The long answer is the rest of this post.
The birria beef is the same preparation that goes into the quesabirria tacos. It braises for hours in dried chiles, aromatics, and stock until it's falling apart. Rich, dark, slightly smoky - the flavor profile sits closer to a Sunday braise than anything you'd expect on a pizza.
That goes on top of the house-made crust, which at Bert's is stretched and baked in the New York tradition: thin enough to fold, substantial enough to hold the weight of a topping like this without dissolving. Mozzarella underneath and between, birria beef across the top, baked until the edges char slightly and the cheese and beef fuse together.
What you get is a pizza that tastes genuinely Italian in structure and genuinely Mexican in flavor. Not a gimmick. Not a novelty that lands well once and disappoints on the second try. It's one of the most-reordered items on the menu, which is the only test that matters.

The reason this pizza works at Bert's specifically is that neither cuisine is an afterthought on the menu. Bert's is not a pizza place that added a taco section, or a Mexican restaurant that started baking pies to broaden appeal. Both sides of the menu are built properly, which means when they cross - as they do on the birria pizza - neither one is pulling the other down.
The quesabirria tacos and the birria pizza come from the same braising pot. One dish, two completely different outcomes. That's either a coincidence or it's the whole point.
