Something Else Entirely

West Hartford has no shortage of taco options. Most of them are fine. Quesabirria tacos are something else entirely, and the difference is not subtle.

The word itself tells you what you're getting: quesa (cheese), birria (a slow-braised beef preparation from Jalisco, Mexico), and taco. But that description undersells it the way calling a Sicilian pizza "thick bread with sauce" undersells the real thing. The tortilla is pressed against the griddle in the braising liquid itself - the fat and juices from hours of slow-cooking - so it comes out crispy on the outside, molten inside, with the flavor of the braise built directly into the shell. The beef goes in. The cheese melts through. The consommé arrives in a separate cup for dipping.

That last part matters more than people expect. The consommé is the braising liquid, reduced and seasoned, and dunking a cheesy beef taco into it mid-bite is the point of the whole thing.

How Bert's Does It

Birria takes time. That's the honest answer to why most restaurants skip it. The beef braises for hours with dried chiles - guajillo, ancho, pasilla - plus aromatics and stock, until it's falling apart and the liquid around it has turned deep and slightly smoky. There's no shortcut that produces the same result, which is why plenty of places that advertise "birria" are serving something considerably less interesting.

At Bert's, it goes on the menu because it's worth doing properly. The consommé is real. The beef is slow-cooked. The tortillas get pressed in the braising fat. It's the same dish you'd find if you drove to a taqueria in the San Fernando Valley - which, for West Hartford, is saying something.
